EDAMAME, CARROT & MORINGA SOUP RECIPE

INGREDIENTS

  • Olive oil
  • Yellow onion (medium, chopped)
  • Celery (one stalk, thinly sliced)
  • Carrots (medium, chunked)
  • Garlic (2 cloves)
  • Vegetable broth
  • Edamame (shelled)
  • Moringa powder
  • (2 tablespoons)*
  • Dried bay leaves
  • Fresh thyme
  • Parsley
  • Salt and pepper

INSTRUCTIONS

  1. Sauté vegetables: Heat olive oil in a pot overmedium-high heat. Add onion and celery andsauté for three minutes.
  2. Then, add garlic and sauté for no longer than a minute. Add half of the vegetable broth, shelled edamame and herbs. Simmer for a minute or two. Pour in the remaining vegetable broth. Then, add bay leaves and fresh thyme and fresh parsley. Season lightly with salt and pepper to taste.
  3. Add carrots, continue to simmer. Cover soup and continue to simmer, stirring occasionally, until most of the edamame have broken down, about 30minutes or less. Add the moringa towards the end of the simmering.* It is all up to you to decide on the texture of this soup. I personally do not like to use the blender or this soup would have been called silky soup.
  4. Remove the dried bay leaves before serving.
